Recipe - Roasted veggies with avocado Smash on Naan

Tried this tonight but swapped some things around. Sorry my picture doesn’t make it look appetizing but it was!

Avocado Smash

- 2 avocados

- 1/4 cup of lime juice

- 1/8 teaspoon of salt

Cut the avocados and mash them. Add lime juice and salt.

Veggies

- 1 head of califlower

- 1 can of chickpeas

- small container of Greek yogurt

- 4 cloves of garlic

- 4 mini naans

- fresh herbs (thyme, rosemary, sage)

- 1/4 cup of olive oil

Directions

- set oven to 425

- drain and dry the chickpeas

- cut cauliflower into smaller then bite size pieces

- place veggies on a large flat sheet pan, cover in olive oil and spread herbs over top as well as salt and pepper

- bake for 20 minutes, Shake the pan and bake for another 20

- chop up garlic and mix into yougert. Add more if you like it super garlic

- once the veggies are done, toast or grill the Naan. Spread avocado, put veggie mixture on top, then add tzatiki. I also added some red pepper flake..

- enjoy !

Haha true but I thought it sounded better then Greek yogurt with a shit ton of garlic. But I should make you recipe here.. SOUNDS SO GOOD

Just yogurt does not tzaziki make. :) 16oz container of Greek yogurt (if you want to be fancy you can strain it but ain’t nobody got time for that) A few cloves of garlic or if you are in a pinch get those tubes of garlic paste from the produce section One or two cucumbers, size matters Dill Olive oil Salt Peel and split the cucumbers and then deseed with a spoon. Dice into small bits Smash and chop the garlic if using cloves Stir everything into the yogurt Wait Seriously give it some time to combine. Put on everything.
