To me, I understood it as him wanting to be with Katherine forever, and accepting that he would have to be a Vampire for that to happen. When Katherine is thought to be burnt in the church, and Damon and Stefan awake after being shot and are in transition, Damon refuses to feed and become one until Stefan tempts him with blood. Now, he's accepted that he is one and certain things are natural to his species. I think that acceptance is why he's able to control it. That's not to say he doesn't feel guilt for decisions.... I'm so looking forward to you learning about Damon and Stefan's past even further. You'll learn a lot that will really impact your views on both!
