The song at the end is the same one they were singing earlier in the show when Jamie and Brienne were tied together on the horse. It is called The Bear and the Maiden Fair. The author of the book series, George Martin, wrote a handful of songs that are incorporated into the books as in-universe songs. And the television show did a really good job of putting the lyrics together with music. I believe that every song you hear heard throughout the series is one of those songs written for the books. There might be an exception or two, but I really can’t remember it. This song, The Bear and the Maiden Fair is supposed to be a drinking song. You hear it referenced quite a few times throughout the series. There is even a time when they say that King Robert liked to sing it. In fact, they were singing it in the House of the Dragon when Leanor returned to Rhaenyra’s room with his companion and they were drunk and singing this same song. In the case of this episode with Jamie’s hand being cut off, the show runners had a rock version made for the episode ending. It is definitely a bit out of universe. But they knew that this was going to be such a shocking moment that they thought it was fitting.

It’s important for the timeline that’s why Jorah was talking about Rhaegarvbeing the Last Dragon, as in the last Targaryen who was a warrior. Rhaegar is Danerys brother. She was born while her father was still on the throne. The Targaryen’s have only been out of power for less than 20 years. Which is much better than if there had been a long gap.
