Dope reaction! sword fight are different than any other type of fighting in this show, they're more lethal and usually ended in a quick session like a true samurai dual. (All it took to win against Mr.1 is a one hit move from Zoro and so on)

He'd be absolutely lethal with them, but using them as weapons is completely philosophically anti-thetical to his beliefs, that he will never use them that way. He believes that using them as cooking utensils in the service of preparing life-giving food is the best way to honor the blades.
