I'm so excited for you to see the rest of the series - it only ramps up from here!!! Hatori doesn't have any magical abilities when it comes to "erasing memories." According to the author's notes it's a form of strong hypnotism that is passed down by the Sohma Family Doctors to help keep the zodiac curse a secret. Hatori's father would have done it in the past, and gave him the knowledge to do it. Also, the Head Maid (a.k.a. Bitch) and the rest of the estate maids know about the curse. It was a throwaway line from season one, but we're told that while the Sohma family is a huge clan, only the zodiac, their families, and others who know the secret live on the inner "Main" estate.
