I dont know why, but originally i also disliked it... but after watching it again i realized all these little details that made it much more likeable.
Dont get me wrong, the Yaks are a difficult race and many didnt like them, because these were kinda vicious and violent - but that may be the point, because the Yaks are antagonistic to the Ponies who are mostly friendly and peaceful... This contrast was quite interesting to watch... - Its also the first time we get to see another race with the theme of diplomacy.

It’s interesting because I see many people not liking this episode but thought it had some good elements with yaks, the animation, and pinkie’s insane planning headquarters. Plus someone who is absolutely perfectionist was a fun twist as they try to rekindle the partnership. Weaker but I still enjoyed it!

Oh my goodness... a nervous Twilight is close to an unhinged Twilight.
And her Freakouts make her relatable.
And yes you may be right: It was kinda a reference to Lesson Zero.
Its also a tough job for Pinkie - everyone is counting on her... no wonder she made faces like Twilight... - and has to put up a pokerface... 🤣

- Well if you think about it: Both, Pinkie and Twilight had absolutely mad freakout episodes ("Party of One", "Lesson Zero"), there are quite the similarities.
"Cherry Jubilee" was last seen in "The Last Roundup" (S2X14) when AJ was running away from home.
Aand you got it right, she did hire AJ to count the cherries... (Chimmi Cherry Chonga 🤣)
And they counted Cherries all night long and are tired as heck - never thought i would ever see someone Sleep-running... - So, Kids... dont be too sleepy and drive a carriage...
Pinkies had quite the journey through Equestria - and quite some references you recognized right away:
