It's not plot armor, Gon put a condition on himself just like Kurapika. In HxH the stronger the condition the more power you can get. For Kurapika he put a condition on himself to only use that power on the Phantom Troup, he has a chain pointing to his heart and if he tries to use it on anyone else he dies. For Gon he said " I don't care what happens to me anymore" meaning his condition was defeating Pitou as whatever cost necessary (His life or his Nen). Also, this is not just "adult" Gon, this is the ultimate form he can ever achieve, meaning this is the strongest he can ever get with a lifetime of training (He can't get any stronger after this). Gon is not the main character really, there are Arcs where his presence is very limited (like the Mafia one).
