As Jimmy highlighted during the film, George Clooney's facial expressions are hilarious - they're the mvp for me. Of course, for a man as attractive and talented as Clooney to also be so naturally gifted at comedy is, really, a bit too much for one person to have. But I digress...
Fun fact: I can't remember where I saw it, but in an interview with Clooney he mentioned that the first song that plays in the film - of the chain gang - was a very old recording of an actual chain gang singing. It got included on the soundtrack, which went on to be a bestseller for years, and thus generated a bunch of royalties for the original "performers". The producers finally managed to track down one of the prisoners, and only one, and so they handed him a royalty cheque for $700,000+ :)

Great stuff. One thing I'd add re: your discussion of the Sheriff's symbolism: When they first meet Tommy and he tells them he sold his soul he describes the devil thus:
"He's white, as white as you folks, with empty eyes and a big hollow voice. He likes to travel around with a mean old hound. That's right."
