Mance Rayder wanted the wildlings to get south of The Wall to protect them from the White Walkers. He DID NOT want them to join the Seven Kingdoms, much less force them to join Stannis and serve in his war for the Iron Throne as cannon (arrow) fodder. Also, you have to keep in mind that Daenerys - as opposed to the kids we saw in House of the Dragon - never had any training on how to control her dragons - and her dragons haven't had any trainers either - so she is sort of trying to learn on the fly.
