Robuchon potatoes have a *shitload* of butter. As Emily said, Tom's issue is that they attempted to make them with *melted butter* which doesn't properly emulsify with the starch & separates out into a pool. Blech.

I think I’m less annoyed with Buddha because when he’s bossiest, he and his team win. So he’s bossy and he’s competent and he’s usually right. Usually, in my experience, bossy people are incompetent and off the rails. He’s exactly who I would want to work for or follow.

Robuchon potatoes take cold butter not melted butter. That was what Tom was commenting about.

A cake tester is basically a metal tooth pick. You put it in the food, then on your chin to make sure the middle is hot. Sounds pretty gross when typed out
