Anyone who fights hand to hand or uses martial arts is using Taijutsu. Every ninja uses it but its very basic, just normal fighting. However, Rock Lee is very good at it so it suprised Sasuke that he was getting his shit wrecked by no special tricks, just plain martial arts and speed. Genjutsu is the art of the illusion. It is any technique in where someone uses their chakra to create an illusion or trap someone in a hallucination where everything seems real but their mind is being controlled to see something and being played tricks on. This is like when Kakashi placed a genjutsu on Sakura to make her see an injured Sasuke on the ground bleeding during the bell test. It doesn't actually do anything to a person physically, but it mentally tricks, traps, and confuses people. Ninjutsu is basically just known as the art of the ninja and its just generally everything else than isn't just normal hand to hand or illusions. Clone, shadow clones, transformation, substitution, water dragon, fireball, hidden mist jutsu, lightning blade etc. ALL of that is ninjutsu and requires chakra. there are subcategories of ninjutsu but you will find out about that later. Mainly, only Genjutsu and Ninjutsu require chakra. Taijutsu is just a really fancy term they use for martial arts.
