Seppuku (also known as harakiri) is the Japanese ritual of suicide by disembowelment. Traditionally, a second (usually a friend) is asked to partially decapitate the person after the person committing seppuku willingly slits their belly open. It's done as a form of atoning for perceived dishonor. In this case, by allowing Nezuko to live and kill a human, Urokodaki (who is the previous Water Hashira), Giyu, and Tanjiro would atone for the sin of allowing Nezuko to kill a human by committing seppuku. And yeah, Sanemi (the Wind Hashira) was pretty dick-ish to stab Nezuko THREE times, and offer her his bleeding forearm immediately afterwards. Extremely unfair "test" imo.
