But as far as Tabitha knows, her parents haven't had sex, at least they've never talked about it in front of her. Sabrina and R.C. have also never let on that they know what sex is. Zig Zag, on the other hand, is someone Tabitha KNOWS has had sex before, and so she's asking the one person she knows has the answer, and someone she trusts to ask.

I don't know if that's a gag reflex so much as a choking reflex from and unexpected question. What shocks me is that Zig is shocked at any question that precocious skunkette could possibly ask her. After all, before the original Sabrina-Online ended, Tabitha did tell Zig that she had found out what Zig did for a living.

Yeah. Some time back, Eric mentioned that he was aging up Tabitha and Timmy. After all, as you mentioned, they'd been around for almost 20 years and should show some signs of growing up. (Of course, he also had a comic where Sabrina mentioned that she noticed she was growing older and Zig Zag didn't seem to be aging one bit.)
