Water is fake, it's all just metaphorical. The characters are already performing superhuman feats like taking a punch from a monster that could lift an enormous tree, using a super powerful sword rotation to survive a fall isn't really a strech. Plus if the water is real why hasn't Tanjiro just summoned some to drink or some wordbuildy kinda thing like that? Ya gotta let it go.
