She was hypnotized by Urokodaki earlier in the season. That's why you heard the voice in her head going "Never harm humans. Humans cannot be harmed." So whether Tanjiro was there or not, she still wouldn't eat.

Not a manga reader so idk, but maybe if tanjiro has kids, zenistu and, all the other cast of characters get families maybe that will be the sequel. Shit, Inuyasha is coming back wit a sequel series.
