Breaking the "rules" to enact some kind of justice, after bending the rules and breaking down a sick old man like Chuck, and all the corporate and legalistic red tape crap, it would feel good to do some good for someone that had it coming. Kim is on the side of justice. Huell got in trouble protecting Jimmy, because of Jimmy, and Jimmy will break the rules for his clients and will do do what has to be done, Huel didn't have to save Jimmy's life or anything of the sort to warrant that kind of help.

She doesn't have the time or the resources to to do the necessary research for this small case, especially now that the judge is breathing down her neck. Which is why Jimmy sent the letters to him and not to her. And the reason she believes the letters and calls is because, like you said, who would go through the effort to do all this. She, like most people, can't comprehend someone doing something so ludicrous.
