Another cool aspect of the Dooku fight is that if you watch it again you can see that Dooku is forcing Anakin to fight defensively and forcing Obi-Wan into an offensive position…essentially taking away their advantages by making them switch roles

It's less a weakness of the form, and more a weakness of just being old. This is expanded on more in the Episode III novelization, but Dooku had become so frail by the Battle of Coruscant that he could no longer adequately deflect attacks from duelists like Anakin. The hits came in too hard and too quickly for him to maintain his stance. Palpatine showed signs of the same issue during his duel against Maul and Savage, and it definitely played a big part in his loss to Mace. The Force can help keep older warriors in the game for a bit, but eventually their ages catch up with them, regardless of the form they employ.

chris keeps saying "His hand is still behind his back!" chris thats his style, literally the form he specializes in, uses one hand. he would actually fight worse with both hands, and you could literally see him breathing hard when the pikes showed up, the biggest weakness of dookus form, is stamina, if his enemy can keep up pressure long enough and dooku cant find a clean counter hit, he gets sloppier and sloppier, thats why anakins style form 5, which is heavy mix of offense and defense is so good against dooku
