I like your interpretation of the bull's head as a metaphor for the tragic Atreides curse. I initially saw it as a symbol of the pervasive danger and political dueling of this universe. It features prominently in scenes where an Atreides faces a deadly opponent (Leto vs the Baron, Paul and Jessica vs the Reverend Mother Mohiam). Both of these interpretations seem equally valid, though.
I'm kind of surprised you favored the 84 version! I'll admit it was my first exposure to the book and got me to read it. But when I did, I later realized that the 84 version completely disregarded FH's paramount message of the dangers of charismatic and messianic leaders. In fact, the film seems to celebrate the messianic hero/charismatic leader with the same passion as conventional sci-fi and fantasy. After all, Paul can just inexplicably summon rain for the Fremen now! For that reason alone I will always view the 84 version as a campy and fun sci-fi movie, but the weakest recreation of 'Dune.'
For those of us who were starved for further tension, subtext, and world building in Villeneuve's 'Dune,' I wonder how many of those missing plot elements will show up in a director's cut of the movie. After all, I remember hearing quotes from the trailer that didn't make it into the movie. I also remember pics from online articles where Lady Jessica wears a stunning red dress that she never sports in the movie, leaving me to believe they filmed the banquet scene but had to cut it.
Finally, I can't get enough of Beans' commentary! :)
