the attack on titan comment is so funny because people who have watched avatar say the same thing when watching aot for the first time (that the walls remind them of ba sing se) and the same applies vice versa haha
(also would 100% tune in if you ever decide to react to aot in the future, its an absolutely incredible show)

To your point on the limitations of earthbending:
I think the problem last episode was mainly that bending gets more difficult with distance and so the seaflor in the middle of the gap would have been too far down, and thus impossible or at least very dicfficult for Toph to bend.
Plus:
Since Katara's way seemed to be working there was really no reason for Toph to be like:
"We'll your way seems to work Katara. But I'm just better than you so we can do it with earthbending instead."

Yeah you are 100% right! I think that is where I keep catching myself, because I naturally do not trust him, even though he has every reason to hate the Fire Nation like he does. Such an interesting character, and I really want to believe he has turned a corner. I would never have guessed we would be getting Jet/Zuko in the show!!

We did sort of get Jet's backstory in his first episode. If I recall, the Fire Nation burned his village and killed his family, or at least that's what was implied.

I agree that the Toph jokes don't seem disrespectful; it's more like they're poking fun at people who forget that she's blind. She's in on the joke.

Toph didn't appear in the live-action yet, but she will in season 2, which will release this year. She was already cast, and there's already a trailer. The actress said that she will be "A little older and slightly more feminine." This doesn't say anything about the blind jokes, but I fear you are probably right about them toning it way down.

The way I think about earth bending is that it's most effective when your stance is rooted in place. We've seen people bend earth while in the air (take Xin Fu in 'The Blind Bandit' for instance), but only bend a small amount. We see Aang and Toph make an earth elevator to scale the walls of Ba Sing Se in this episode, but as you noted, they had to stay touching the wall. I think it would have been difficult for Toph to push a piece of earth across the water while she was on it in the last episode, but she probably could have raised an earth bridge. There might be exceptions to this that I don't remember, but I think it's a good rule of thumb.

yeah, my head cannon is they are able to run countless forges to bend (literally, not bender-y) metal, so it makes complete sense how much metal they are able to produce for the war effort!

It's crazy how technologically advanced the Fire Nation is, especially compared to the other nations. I assume being able to generate their own fuel source with firebending is a big reason for that.

I'm so glad you're noticing how brilliant Sokka is! It would be much more obvious if he wasn't meant to be a comedy character from the start.
He's the one to think outside the box and strategically. In my head canon, if he existed in real life he would be an engineer
