While I agree on a few of your points, it's stated in the episode that the bus crash is 3.5hours away from a road (via a new walking track - so faster than is possible in heavy forest). that equates to about 12 - 13km to the nearest sign of civilisation, so every other direction could be hundreds of kilometres (no guarantee you'd pick the perfect direction to walk in). The part where she was weak, scared and irrational probably because they were malnourished to the point of starvation and hallucination. You probably have never experienced that before, but from experience - it's not a fun time. You get so physically weak that you can't even lift your arms to each for something and grabbing even something like a cup to drink takes all your willpower and strength. While the ones who ate the meat had more calories to burn, to chase them down and easily overpower them - regardless if they had a knife or not. Everything in that bus crash arc is actually quite accurate, except maybe the cannibalism... Even her saying she couldn't move from fear and then running is the outcome of her choice between "fight or flight" where your body can dump a huge amount of adenaline into you blodstream and muscles directly... people have been known to lift a metric ton and accelerate as fast as a race horse all while physically tearing the muscle fibres past breaking point, even stripping their meat and tendons right off of their bones. You destroy your body in these moments, sometimes past the point of recovery, sometimes it's not so bad.

"unless there is another Grisaia anime coming out soon" Grisaia: Phantom Trigger airs on March 15th. Don't know if that's soon enough though.
