As I understand it, there was actually supposed to be a serious swordfight there, but the filming ran for many takes and Harrison Ford had contracted dysentery, so he got fed up and eventually just pulled out his prop gun and shot the guy to let off some steam. George Lucas apparently liked it so much he went with that take.
