Besides the "Sunny" connection, they represent optimism, devotion, and admiration. Sunflowers always face the direction of the sun, which would relate to Jack always keeping his attention and devotion towards his own "sunshine". You could maybe read this as as a 'promise' as well as it reliably follows the sun and also represents longevity, but Jack has a lot of associations/theming with old memories/nostalgia.
