Have to work unfortunately. But here's a question. What's your opinion on spraying aromas on beans before you grind. It was a college of mine that worked in an Italian restaurant long time where they would spray cardamom on there beans to give them a more Italian flavour. Must say, I tried it and was pleasantly surprised by the result. A mediocre coffee was lifted to a ok status. Still what's your opinion and experience if any with it.

Won't be able to join the stream (have an appointment at the optometrist), but I will definitely watch later! I have a couple of questions: Where you buying decaf from? (Any roaster recommendations?) The rest of the questions are regarding water chemistry/setup: Do you have a standard brew water recipe or do you change depending on coffee/roaster? If you do have a standard one, what is it? (What was the water chemistry you were using with your wilfa uniform at home? Are you still using the uniform at home?) What is the easiest way of sourcing de-ionised/distilled water for the home in the UK (apart from through a zerowater jug because my experience with them has been frustrating)? I really hope the decaf is tasty!! :) Have a great day :)

Hi James! On the topic of decaf, have you heard of Exhale “healthy coffee” which supposedly removes the negative effects of caffeine? I haven’t been getting good results from it taste wise but have noticed it doesn’t affect me like regular caffeinated coffee. Would love to hear your thoughts. Looking forward to the livestream!

When oh when oh when will we receive your ultimate tiramisu recipe?! I've been using Le Beccherie's recipe (halving the sugar), and using cold espresso to soak the fingers. I'm not sure it can be improved upon, in a general sense but texture of my mascarpone mix is VERY inconsistent batch to batch so your measured, rational opinions on how to get there would be very appreciated. Also, bring back the slurps.

I would like your take on my idea of combining a low temp Samo bloom with a frozen Lillydrip in a Pour over. The idea is similar to using a frozen ball with an Espresso. Lance Hedrick liked the idea in his live video,but I do not believe has tried this method, yet. I have been getting excellent results with my Origami dripper and light roasts.

Yay!!! Decaf! I’ve been diving in decaf for over 3 months now and still haven’t been able able to brew anything decent… I really hope I can learn what I’m doing wrong and finally can drink Espresso again (had to reduce caffeine intake)

On decaff - what are your thoughts on the suggestions that the decaffeination process tends to produce a higher presence of fatty acids in coffee which some are labelling as possibly problematic for heart disease etc?

Have you ever tried making coffee by hand/from scratch? (Picking the berries, roasting the coffee, etc.)? My dad used to say that his parents (in Jamaica) prepared coffee themselves by picking the berries, roasting the beans on an open fire, grinding them in a mortar and pestle and brewing with a cloth pour over method. It would be interesting to see what kind of coffee that method produces.
