The Year Ahead!

I'm aware the New Year is always awash with this kind of thing, but it is inevitably a time of planning and scheming - and that includes those of us working on the YouTube channel.
I wanted to write to update you on a project and ask for your suggestions and feedback.
Firstly - the year's first "big" project is now in post-production. It's a documentary titled "How Starbucks Popularised The V60", and I promise the title will make sense when you watch it.
We interviewed a bunch of people for it, and quickly realised that in trying to meet our goal of a sub-20-minute YouTube video, we'd be leaving some gold on the cutting room floor. So we're making a Patreon-only extended version, which will include more stories and insights. We'll experiment with releasing an audio-only version, with a slightly different structure, for people who'd prefer a podcast format. These two versions will be available to all Patreon supporters and will also be released to a wider audience as a purchasable bundle (not for much money, though!)
We're working through the other big projects for the year, and alongside this we'd like to get the cadence back up a bit on the more traditional videos - things like reviews. In the immediate pipeline are videos about the Fellow Aiden, the Zerno Z1 grinder, a very very cheap espresso machine (from everyone's favourite German multinational, family-owned, discount supermarket chain), and a very expensive lever machine (that will make one of you very happy, I suspect), and a not as expensive lever machine (that will also make one of you very happy).
We're also examining which technique videos would be the most useful this year, and you're very welcome to share your thoughts here! Please leave a comment, and if you agree with someone's comment, like it so I can get an idea of how popular each might be! (Thank you!)
In addition - feel free to throw any other requests that you have at me. We have a pretty full slate of ideas already, but we're always open to ideas, suggestions and inspiration!

James - since you mentioned elsewhere that you're looking at doing a scale test refresh, I can only assume that a storage container test refresh will happen at some point. Whenever that happens, would you mind doing comparisons with the original coffee bag? Maybe opened, closed with tape, closed with clip... Maybe sampling at the top and bottom of bag... I have a hypothesis that a closed bag is just as good as a displacement solution, and thus, better than "air tight". This also begs the question: is an open bag worse or the same as air tight? I imagine that where you keep an open bag could significantly affect the quality as well (i.e. no versus some air movement). Sadly, I don't have the palate or endurance to maintain objectivity when doing successive taste tests.

I’m thinking a reasonably inexpensive but good quality espresso machine as your initial purchase ( so one that can be used with pressurised baskets i.e. no need for a grinder at this stage as you can buy pre-ground coffee). Then, next purchase would indeed be a grinder further down the line… that’s your two steps to building decent home set up… but wonder what else you could purchase along the way to keep things interesting, …

I would be curious to have your views on the benefits/downsides of portafilter diameters less (or even, significantly less) than 58mm. Presumably the lower the diameter the mechanics of extraction start to change and it feels like the results of this haven't been debated a lot (at least not lately?). Cheers!

I wonder about something in-between - would be interesting to see a video focussing on half-caf. Is it a good in-between? Is there still too much caffeine?

But I am at ~1610 meters and therefore can't get my brew temps high (for lights roasts in particular) and I wonder if there are things I can do with that as a consideration. Cheers!

I struggle with determining 'when' I've dialed in my pour with a new bag unless I've had a really good cup of the same coffee from a local cafe (which usually means I've bought the bag at said cafe). In the world of online ordering and coffee subscriptions, this baseline doesn't really exist. Taking a look at it from a professional's mindset could be a game changer, especially from beloved personalities as Greg mentions. Of course, I'm always for supporting local! Nonetheless, sometimes my cafe doesn't have a coffee I prefer, the roasts are quite a bit out of date, or I want to try something new, etc.

Everyone is talking about getting the freshly roasted coffee delivered home, but I have no idea where to get a bag of that freshly roasted coffee without spending more than necessary. But I don’t even know how to find a roasting workshop in the first place. And I don’t also know what is the adequate price for freshly roasted coffee vs the “old” (and often overly expensive) coffee you can buy at your local grocery store.

2025-01-16 01:25:15 +0000 UTCI would love to see a scientific deep dive in RPM on grinders. It seems likena feature that is in high demand, but no one seems to know what it really does. Sometimes faster rpm is finer grinds, sometimes it means less fines. I would to see what is causing this shift in performance over different grinders. Mainly for flat burrs, as for conical there seems to be more consensus (slower is better).

2025-01-11 14:47:55 +0000 UTCI fear the logistics, but a collaborative tasting set through Cometeer where several YouTube coffee personalities pick a roaster and a coffee and “dial-in” a concentrate with Cometeer which represents what they each feel is an “ideal” or “benchmark” cup of filter coffee indicative if their preferred style of cup. Each person produces a video about the coffee they chose, about the attributes which make it a great cup of coffee for them, and containing a v60 brew-guide. Participants can purchase the Cometeer set and, in one way or another, purchase the roasted coffees so they can try the benchmark concentrate and then work with the beans to replicate the benchmark. Just knowing what various coffee personalities admire in a great cup of coffee and strive for when brewing provides so much useful context for watching their content.

2025-01-11 14:28:54 +0000 UTCI would add that I experience many people who conflate fermentation method (i.e. aerobic, anaerobic, etc.) with coffee cherry mucilage processing method (i.e. washed, honey, natural). Even experienced speciality baristas I know have believed an anaerobically fermented coffee was different from a washed, honey, or naturally processed coffee. Seems like it may be helpful to disambiguate fermentation methods from mucilage processing.

How long they can be stored … does it matter what container…etc etc. I have seen your vid on TWW etc. that was great but kinda expensive . Please include ideas for espresso machines such as …. It’s ok to include calcium if…. Easy access to boiler ….and you can clean with xyz solution… Last but not least, what types of coffees will benefit most from specialized recipes.

Are certain frequencies or songs better for shot quality? Does your coffee taste better Rickrolled?

In particular, the side-by-side comparisons of different grinders, machines, methods, etc. are interesting and helpful. In addition, occasional more in-depth videos, whether sub- or super-20-minute videos, would be especially interesting and informative; for example, along the lines of your recent exploration of the decaffeination processes, or like past explorations of technical/scientific topics, interviews with academic researchers or industry professionals, and so forth.

V60 has time as a measurable variable but that has other factors, and with Aeropress I'm a bit lost. When I settle on a grind setting after experimenting based on taste, I'm not actually sure whether what I have is "fine", "medium-fine", etc. * More in depth on cupping for tasting might be nice. Does it always give you a good view into the best cup you could make? Is there anything about cupping that might be misleading? * Maybe more generally, when I get a limited amount of beans, how do I quickly get the most out of it? If I have less than 100g of an unfamiliar coffee, how do I get to a good cup quickly so I don't waste premium beans? Is there like a binary search approach? * What's the deal with "Italian style"? I've been to a bunch of places where this means "bitter dark roast espresso"; is this just a reaction to third wave light roast trends? Is there a real "Italian style" that they're failing to replicate?

Things like kopi tubruk, Indian filter coffee, Turkish coffee, Greek coffee, Cafe Cubano, Vietnamese coffee, Arabic coffee, etc. Could even bring out the Tias Kettle again ;)

I.e.: same beans, same day, same water, same person doing the brewing, how big of a difference (1-5) do the following changes make: - center pour vs circle pour - grinding "a bit" finer/coarser - 1 pour vs 3 pours vs 5 pours - samo bloom - v60 vs kalita - 90C vs 100C - etc. give people an idea of how much certain things move the needle.

It's taken interesting coffees and revealed flavors that I couldn't taste with a v60. I feel like it's a brewer that showcases the coffee in a way that respects the new craft growers and roasters are putting into the bean.

It boggles my mind as grinding finer is typically a good tool when dialling in traditional shots, but since with turbos we are looking for faster flow it kind of defies the purpose.

I remember learning lots reading about how cocoa is grown and it's history, I expect the same is true for coffee.

Regarding the V60 documentary: I cannot wait, and I’m glad you want to publish a podcast-style version. I am one of those people who loves long and insightful stories and perspectives, but finding 30 minutes to 1 hour just to watch videos can be quite hard for me. The possibility to listen while cooking, doing laundry, stretching, etc., is awesome—thank you! In terms of requests: I love everything you put out when it feels like you enjoyed it yourself as well. Those things resonate with me the most. One type of video I would love to see is a comprehensive and structured guide on how to approach and dial in a simple V60. Not just an easy guide or recipe, but an in-depth "Here are all the variables you can change, and each one does the following..." From temperature, grind size, flow rate, number of pours, blooming, etc. Wish you and your team all the best for the upcoming year.

I would LOVE to see something similar done with processing... wet vs natural vs honey etc... I would really enjoy comparing the same beans processed differently to see if I could identify a difference and choose a favorite.

But also the fun bits and afcourse the bloopers. Who is behind the camera. Who is behind sound and audio. Just the working process and the people behind all the great great content of the James Hoffmann YouTube channel. Thank you so much for all the great usefull, informative and funny content. Every time I need to know something about coffee I always click on your videos first.
