Healthy Travel Cooking with Lins

Ingredients:
- Lettuce of your choice (we love the combination of watercress, lamb's lettuce and arugula)
- 1/2 cucumber
- A handful of cherry tomatoes (or 1 big tomato chopped)
- 1 avocado
- 1 ball of mozzarella
- Some red pepper
- 150gr chicken strips (pre-fried or fresh)
- 1 shallot
- 1 clove of garlic
- Pepper, salt, olive oil, chicken spices or paprika spices
Preparation:
When using fresh chicken: Season the chicken fillet with pepper, salt and chicken spices or paprika spices. We like to have warm chicken strips in our salad, so we keep this step last.
- Shred the shallot and a clove of garlic.
- Rinse the lettuce, tomatoes, red pepper and cucumber and put them in a deep plate or bowl
- Shred the mozzarella and add it to the vegetable mixture
- Cut the avocado into pieces or strips of your choice and add these as well
- Season with salt, pepper and a good dash of olive oil. Now add the shallot and garlic too.
- Mix everything together and taste.
We love the flavor of lemon, so you can add this to your salade to create summer in your plate. It also helps to keep the avocado fresh. - Finally add the fried chicken (cold or warm)
This is a cheap and simple dish that you can prepare perfectly naked.
However, we always recommend a kitchen apron because we do not want to be responsible for possible accidents ;-)
