Ingredients:
Salad:
- 125 gr salmon fillet
- one hand full of sherry tomatoes
- 1 avocado
- 1/2 red onion
- 75 gr arugula salad mix
- optional: cucumber
Dressing:
- 3 tablespoons of olive oil
- a pinch of salt
- a lot of black pepper
- a teaspoon of lemon or lime juice
- a pinch of provencial or italian spice
Peperation:
- Cut the tomatoes into slices, the avocado into pieces and the onions into rings.
- Then divide the sliced vegetables and arugula salad mix over two plates.
- Meanwhile make the dressing by whipping all ingredients together in a bowl with a whisk.
- Divide the salmon between the two plates and drizzle the salad with the dressing.
Enjoy your meal!
TIP: You can serve the salad for lunch or as a side dish with dinner. The salad is nice and light, but also very filling due to the smoked salmon and avocado.
