Preparation:
1. Preheat the oven to 200 ° C.
2. Marinate your salmon of your choice (I use a marinade of: 3 tablespoons olive oil, 2 tablespoons soy sauce, provencial herbs, chili pepper and black pepper) I do not use extra salt, because the salmon is already salted and the feta that we will add afterwards also.
3. Rinse the spinach and drain well. If you use spinach from the freezer, let it thaw first and drain well.
4. Rinse the cherry tomatoes and cut them in half.
5. Shred 1 clove of garlic
6. Heat some olive oil in the pan, add the garlic and spinach. Put your fire on a medium temperature and let the spinach melt completely (+ - 5 to 7min)
7. Place the marinated salmon in an oiled oven dish, and add the halved cherry tomatoes (you can season them with the marinade of the salmon or season with salt and pepper.
8. Crumble the feta over the salmon. Cook in the oven for 10 - 12 minutes. I love that my salmon is still a little pink on the inside, so checking it regularly won't hurt.
9. Spoon the spinach on your plate, add the salmon on top and finish with the cherry tomatoes.
The combination of the spinach with the tomatoes is delicious!
