Healthy Travel Cooking with Lins

Ingredients (2 persons):
- 200 grams (whole grain) pasta
- 250 grams of mushrooms, sliced
- 1 out
- 1 clove of garlic
- 250 grams of cherry tomatoes
- 1 avocado
- A handful of fresh parsley
- Olive oil
- Pepper and salt
- Chili pepper (optional)
Preparation:
1. Cook the pasta according to the instructions on the package.
2. Cut the mushrooms into strips or cubes. You can use all kinds of mushrooms in this dish
3. Rinse the cherry tomatoes and cut them in half
4. Shred your onion, garlic clove and parsley
5. Cut your avocado (below I give some tips on how you can do this very easily, like a professional)
6. Heat the oil in a frying pan with a high rim (or a wok). Make sure that these do not burn!
7. Fry the onion with the garlic for 1 minute and then add the mushrooms.
8. Add the cherry tomatoes for the last 2 minutes and immediately turn off your heat.
9. Add the pasta when it is warm. Add 3 tablespoons of olive oil to the yellow. Stir well and season with some pepper, salt and chili pepper.
10. Finally, add the parsley and avocado.
How to cut your avocado like a pro:
- Cut the avocado in half. Use a big chef’s knife, that’s the easiest. Slice the avocado lengthwise until you feel the knife hit the pit (you don’t cut the pit!)
- Now rotate the avocado until you have two halves apart
- Remove the pit by aiming your knife in the pit and just whack into it. Twist the knife to pull out the pit
- Use your knife’s tip to score avocado flesh, sinking squares. Then scoop it out with a spoon
- Use your spoon to loosen the skin all the way around and scoop out the flesh.
