Ingredients:
- 150gr mushrooms
- 450 - 500gr green beans
- 1 onion
- 400gr chicken fillet (2 breasts)
- Provencal herbs
- Pepper and salt
- Olive oil
- 250gr cream cheese
- 50gr ground cheese
Preparation:
- Preheat the oven to 175 °C (350 °F).
- Heat 2 tablespoons of olive oil in a large pan on medium heat. Add the onion and fry it.
- Add the mushrooms and bake for about 8 minutes until most of the moisture is gone. NOT ALL OF IT, this is perfect for your ‘sauce’.
- Add the green beans and let the beans cook for about 15 minutes.
- In the meantime, cut the chicken fillet in an oven dish and marinate with pepper, salt and chicken spices (note: chicken spices contain a lot of salt, so do not add too much extra salt).
- Stir in the cream cheese with the vegetables and let it melt.
- Season with pepper, salt and povencial herbs.
- Transfer the mixture to the baking dish next to the chicken fillet.
- Sprinkle the chicken breast with the ground cheese.
- Place the dish in the oven for 25 minutes until the dish is bubbling hot.
