Healthy Travel Cooking with Lins

Ingredients:
- 500gr mixed minced meat
- 1 carrot
- 500gr mushrooms
- 1 zucchini
- 1/2 onion
- Fresh parsley
- Pepper and salt,
- 1 small chili pepper (optional)
- 4 large tomatoes
- 1 teaspoon of tomato paste
- 1/2 tin of diced tomatoes
- 1/2 dl red wine
Preparation:
1. Peel and finely chop the onions.
2. Place a large and oven-proof stew on a strong fire. Heat a dash of olive oil in it.
3. Stew in the pieces of onion and garlic and shred your chilli pepper (remove the seeds if you don't like very spicy). Stir frequently and don't let them fry!
4. Add the minced meat and immediately season with salt and pepper
5. Peel the carrot Cut into small cubes. Let the carrots simmer as well.
Cut the mushrooms in half and add to the stewed vegetables.
6. Add the tomato puree to the vegetables and fry briefly. Deglaze with the red wine.
7. Add the tomato cubes to the sauce. Roughly chop the tomatoes and add these to the sauce. Season the sauce with salt and pepper.
8. Stir through the sauce, put the lid on the pot. Let it simmer for at least 1 hour to 3 hours on a low heat (!) The longer you let the sauce cook, the more flavor the sauce will have!
Preparing the pasta:
1. Bring a large cooking pot of water to the boil. Add a good pinch of salt to the water.
2. Cook the spaghetti according to the instructions on the package.
Serve the pasta on a plate with a generous portion of the sauce. Finish the spaghetti bolognaise with grated cheese.
