Healthy Travel Cooking with Lins

Rice with spinach and tomato in coconut milk

Ingredients:


Preparation:

  1. Bring water to a boil and add the rice (as mentioned on the package) add 1 tablespoon rice seasoning or yellow curry to the water. This creates a nice yellow color and gives your rice extra flavor.
  2. Chop the onion and press or chop the buds fine.
  3. Cut the tomatoes in 2
  4. Heat olive oil in a pan, fry the onion and add the garlic afterwards.
  5. Add the spinach and let it shrink
  6. When the spinach has shrunk, add the tomato cubes and immediately the coconut milk
  7. Add pepper, salt and the turmeric or yellow curry
  8. Let it simmer for 10-12 minutes on a low heat
  9. Serve the rice and on top of the vegetables
