Ingredients:
- 1 onion
- 2 cloves of garlic
- 150gr cherry tomatoes
- 1 teaspoon Ground turmeric or Yellow curry
- 200gr rice
- 150ml Coconut milk
- 400gr Fresh spinach
- Olive oil
- Pepper and salt
Preparation:
- Bring water to a boil and add the rice (as mentioned on the package) add 1 tablespoon rice seasoning or yellow curry to the water. This creates a nice yellow color and gives your rice extra flavor.
- Chop the onion and press or chop the buds fine.
- Cut the tomatoes in 2
- Heat olive oil in a pan, fry the onion and add the garlic afterwards.
- Add the spinach and let it shrink
- When the spinach has shrunk, add the tomato cubes and immediately the coconut milk
- Add pepper, salt and the turmeric or yellow curry
- Let it simmer for 10-12 minutes on a low heat
- Serve the rice and on top of the vegetables
