I think it was to show that Cassandra was there to teach all along and wasn't just a villain out to get Rachel. She was cheering her on, and every student to succeed in her own way. She had it rough in her broadway career, so wanted her students to get tough...but was also pulling for them.

I think they wanted to close off that storyline because I believe this was Kate Hudson's last appearance on the show. But they could have dropped that whole storyline in this episode and no one would have noticed. You will get your answers about Ryder's catfish very soon! It just wasn't talked about in this episode.
