I freeze olive oil to keep it fresh as long as possible. I keep the open bottle in the frig. I need to make ghee after purchasing butter at pre-Christmas sales, as ghee lasts forever. Even purchased a couple bottles on sale, and tucked into the freezer to extend shelf life, though ordinarily not necessary. We really do have to keep a good supply of fats on hand, and do remember to give some to your pets, as well. They need it at least as much as we do. We need not just one or two bottles, but enough to last as long as the foods we have prepped. Won't hurt to have "too much" as rancid oil will burn just fine for candle light. If you have candles for lighting, purchase a few cans of Crisco or the like, and put a small amount into the top of a candle - the candle will burn far more slowly this way. If you run out of good oils, you can use the shortening as a secondary source of fat for humans and pets. Luv me sum pnut butter for fats, and am trying to stock a good deal of that, along with milk chocolate. Terrific video, Michael~! Thanks!

Agreed, we use and store olive oil. Fats are one of the most difficult things to prep. Peanut butter a good option for some of it.
