The LDS lady at the Bishops Store told me that it is best to store whole peppercorns as they last 3-4 years without losing efficacy and ground about 2 years. That was 30 years ago so maybe there is an update? I've got 10 year old peppercorns coming out of rotation and they seem fine... if I don't post again, it killed me. Lol.
