My mind is now stuck imagining Ash Ketchum on his quest to become a Master Civil Engineer.

They are the same character regardless of what region you are in. I have to admit though, it's a conscious effort on my part. You ever hear how Rica Matsumoto voices Ash?

Well, we later find out Ash is "The Chosen One". ...several times... But he starts out normal anyway. Now if only he would share how he manages to age like 2 years after 20

If I had to pick my Top 1 Kanto Episode, it would no doubt be "Pokémon - I Choose You." I choose it because of how it explains the world of Pokémon in less than 22 minutes, especially with that opening scene of Gengar vs Nidorino, which is on par with Batman The Animated Series iconic opening. Additionally, it's complete standalone episode with an ending that hints to future adventures, but necessarily requiring the viewer to go forward. But the reason I choose this episode above the rest is because it's really where Satoshi's core character truly shines. Namely, when faced against impossible odds, Satoshi would put the life of a Pokémon who did not like him over his own. Whereas the games tell you that the Pokémon you have are meant to protect you, Ash tells you that you have to protect them when they need it the most. And considering the jokes about Pokémon being captured and fighting for their trainers, it's that moment that makes Ash an ideal trainer despite his many flaws as an actual trainer. In fact, this is how you know that Ash can become a Pokémon Master. And whenever there's a moment that hits close to that one, it resonates with people a lot. This is why Snow Way Out is remembered fondly despite having a weak and forgettable plot. That moment when Ash tells his Pokémon to stay in their Poké Balls while he endures the cold, and they refuse out of loyalty and love for their trainer? That's very close to the original moment of Ash protecting Pikachu from the Spearow flock.
