The quintessential Japanese basic cooking technique is making dashi, which is basic broth. It usually has a square of dried konbu seaweed in it. She was making the point that dried mushrooms are more flavorful than fresh mushrooms in cooking, and so it is true with seaweed. Dashi is used in miso soup. She was also talking about the umami that comes from soy, which is an ingredient in both ponzu sauce (as soy sauce) and is what tofu is made from.

A la mode is French for "in fashion", "according to the way". I don't know how it came to mean with ice cream.

Ala mode does basically mean 'with ice cream'. I don't know the real translations, but I only ever hear the term ala mode with pie. Like a slice of pie with a scoop of ice cream. You will learn more about the door as the season goes on. You will find out who created that door, why he has it and everything else. Don't worry. If you want to know more than I suggest reading either the Manga or Light Novel. The Light Novel will have more details, but you still get some great stuff from the Manga. Even if you two decide not to or not to right now that is fine. I love watching you two react to the anime without any knowledge on what is coming yet and how the anime has "worded" some things in this episode at least. lol Can't wait for the next episode.

In the book she likened the tofu steak flavor/creaminess to the only non vegan thing an elf ever had, mother’s milk. She has a very faint memory of it from when she was a baby. Elves have long memories. It makes more sense in the book, whereas here it just shows an image of an elf nursing her baby with no context.
