Katara's voice actress talked about it (apparently it was in the script), and one of the tie-in books has a chapter that retells the cave sequence from Katara's point of view, and she says so herself. And about Zuko....patience. :) It's only the start of season 2. Zuko takes time to grow. Time, time, time.
