Yeah the revelation in S2E1 is way more impactful and shocking than it is in the OVA. The circumstances are different, and the way it's revealed is also totally different.
The show isn't ruined or anything if they watch the OVA now, obviously. But in my opinion, avoiding it is better. Like I said, it doesn't actually ADD anything. So what's the actual advantage of watching it now?
Also, there's something else that gets revealed. A name.

It doesn't matter when the source material released it. As far as the actual consumption of the anime goes, it's more satisfactory to have the things that are revealed by Ilse's Diary to be instead revealed by season 2.
Look at it logically. They just ended season 1. They know X amount of information. Suddenly, out of nowhere, they're thrown into the past with Ilse's Diary, and there they discover some never-before-revealed aspects.... Like, what? It's not even part of the main plot. It's as if someone straight up walked up to LM, and spoiled... "Oh, by the way... The Titans can [Spoiler]...."
On the other hand, will they miss anything if they don't watch it now?

On your confusion about why Levi reprimanded Eren for trying to eat Annie, even tho Eren wasn't trying to eat her, don't think about it oo much -- in the source material Levi doesn't use his gear to save Eren because he kind of has a serious injury, hence him not helping in the fight lol. The anime just added in him swooping in for *cough* fanservice

Your reason makes no sense. The source material has it released during the middle of Season 1... So it doesn't really matter that the anime only released it becausethey wanted to show as much content as possible

I think they should watch Ilse's Notebook after season 2. It will be more satisfactory, and they won't miss anything if they don't watch it now.

I strongly suggest you NOT to watch Ilse's Diary. Yes, it came out after season 1. But they released it because they weren't sure they were even gonna make season 2. It was during the break. I promise you won't miss anything if you watch it AFTER season 2. But it will feel more satisfactory watching it then.

Ik people are talking a lot about the OVAs, but just a note, Ilse’s Notebook is probably the one to pay the most attention to. It’s the only one published in the same continuity as the source material. Other OVAs like No Regrets and Lost Girls are considered important and I do reccomend them but they’re more like additional content
