And to be clear, none of what I said about Mando’s group has been explicitly confirmed, but given what we know about his group and the Death Watch as a whole, some variation of what I said has to be correct.

Sort of like in World War II, Imperial Japan officially surrendered in 1945, but some fanatical soldiers continued to fight on some Pacific islands until the 1970's. Bo-Katan was the leader of the Death Watch, and it was disbanded at the Clone War's end when the Empire took over Mandalore. However, it's most radical members refused to surrender and formed the Children of the Watch, taking all of the orphans they had collected during the war and inducting them as foundlings. So Mando's group isn't Death Watch, but a remnant of it that practices even more hardcore beliefs than even Vizsla or Bo did, like the no taking off the helmet thing.

Technically Sabine was never part of death watch, as she was born during the Clone Wars and the Death Watch was disbanded at the war's end. Her mother was part of it though, and we saw her at the end of Clone Wars with Bo-Katan.

Jango Fett is from Concord Dawn. This is originally from Legends, but when Boba Fett shows The Mandalorian the chain code on his armor in the latest episode of Mando (the Tragedy) it can be translated to Concord Dawn. The former leader of the Protectors, Jaster Mereel, was Jango’s mentor and adoptive father who brought him into the Mandalorians.
