Yea theyve been retconning the older wars quite a bit with the new content thats part of the reason i think they time jumped discovery as well You havent met Kirk yet but you have met his Brother in Strange New Worlds he temporarily appears in episode 1 and is a side character in ep 2

The first two characters they showed the captain and the lady in the flashback were from the original series. The captain was the helmsman for the enterprise in the original series the lady was a yeoman. They are kinda giving a back end story to the events of the star trek movie from 1991 the undiscovered country. The Klingon was Kang the character and actor appeared in star trek episode starting in the 60s all the way through the late 90s.
