I wrote this script before covid started popping off, so I was finally able to post something timely without adding any more "quarantine kitchen" videos to everyone's feeds
This is the first video ever for which I hired an editor. Could you tell? His color correction is so much better than mine, and he's better at audio than I ever could be. If I can find a way to afford his services long-term, I would love to start putting out better, more frequent videos.
I shredded this cheese fresh off a block, but I'm not above bag cheese. In my opinion, there are better hills to die on. Freshly squeezed citrus juice, for example, just can't be replicated.
Crema is also sometimes labeled as "Mexican Table Cream". It's like a cheaper version of creme fraiche and I like keeping it around for garnishes or making potatoes creamier.
The chips I had to use here are not the ones I like. If you're shopping for chips, look for stone-ground, a deep rich dark yellow color, and a distinct lack of those weird fake black specks you see on my chips.

First thought while watching your video was legitimately "wow it looks better than your other ones", sooooo yeah editor was a good choice man. Also, "quarantine kitchen" videos might be a trend you can ride to hiring an editor full time? Selling out could be worth it haha!
