The bit on food preservation could be its own whole video. I have a lot of luck simply treating produce like cut flowers and storing them in a glass of water. This works especially well for celery and green onions... things with a visible root.
I'm not totally against the concept of science developing to a point at which it concludes that vegetables are mostly unhealthy, but we're nowhere close to that and I think the idea is mainly used as an excuse to scarf down hot dogs daily.
As hopefully made evident by the recipes I mentioned which contain lots of fats and carbs, eating vegetables doesn't have to be a matter of consuming health food. To be honest most of the sentiment behind this video is more so about hoping that people can eat more fiber, more variety, and more phytonutrients.
Please eat more plants it's good for the longevity of your own life and the ecosystems in which we live. I try not to talk about health on my channel because it's so individual and specific and subjective, but eating plants seems to be the most universally accepted good-thing-to-do, unless you're doing the carnivore diet.
