I think the only downside to this cooking method is that if you're on the fence about eating fish of any kind, it might be easy to conflate silky with slimy since all you eat is birds and mammals. You wouldn't want to serve this to a super young crowd that might not be into salmon in the first place
Everyone already knows that salmon is fatty, but you don't really realize how much fat is in there until you slow roast and feel how it turns to fish butter
Most of the time, I make this just plain with salt and pepper. On day one it's served on a bed of Israeli couscous mixed with mushrooms, truffle oil, parsley, lemon, and parmesan. On day two we eat a reheated piece over rice. To date, we haven't had any leftovers past that. With a whole side of salmon, we're each able to eat one large portions per day and have it gone before then.

This Haus campaign makes all the creators drop the ads in the first half of their videos, but I got special permission because mine are so short! I don't know if interrupting the learning process is very nice.
