Intuition Early Access & Notes

This script was a hard one to stop writing, because of the interconnected nature of cooking decisions. The thin steak I showed needs to be cooked over high heat, and that high heat would dictate that you can't dust the meat with spices, lest they burn. The same would go for a sugary marinade. But the parameters I drew for myself were "those are markers of smart cooking. This is just about ~intuition~."

This video could be a massive flop because it's too obtuse, but I hope it can bring attention to a couple specific practices on which a relative beginner can focus. If not, hopefully it's an reassuring monologue for seasoned cooks, like the experience of a pro reading Salt Fat Acid Heat.

I really appreciated this video. I've been trying to think of cooking less from a practice-based perspective and more from a theoretical one (though, at times, theory in itself can be practice) and have struggled to find the lexicon to let me do that. I found this to be very insightful. Thanks!
