- kimchi is a vegetable that is seasoned, spiced, and then aged to the proper level of fermentation, like pickles - kimchi is basically Korean pickles - the kimchi paste is a mixture of rice flour porridge, garlic, ginger, shredded root veggies, and LOTS of red pepper flakes, which is then added to vegetables that have been brined in salt, like cabbage, radishes, turnips, and various other veggies, depending on region - some areas use raw oysters in their kimchi, some areas use salted shrimp, some use fish sauce, which is why kimchi is not usually a vegan food, as it's typically made with animal products - many vegetables can be made into kimchi, and they are all technically kimchi - the most commonly known kimchi, however, is the one made from napa cabbage (baechu kimchi) - usually, when the cabbage (or other vegetables) is in season, families will buy large quantities of it, and come together to make giant batches of kimchi together - it's basically a time for families to get together, eat, hang out, be chaotic, and make kimchi that'll last everyone for a long time - when stored properly in a cold dark place, taking out small portions as needed, kimchi can stay good for months - one of my favorite parts of making kimchi with my family was always when, after making cabbage kimchi, we'd eat fresh unfermented kimchi with boiled pork - it's very simple, doesn't involve a whole lot of actual cooking, but after all the hard work and extreme back pain, it is one of the most delicious foods in the world - radish kimchi (what Jungkook and Hobi made) is one of the kimchis that is just not good fresh - the radish flavor is too sharp and pungent, and the flavors have not yet melded - cabbage kimchi is ok fresh, but radish kimchi NEEDS to ferment

kimchi is not super easy, it takes a long time and its usually made in bulks which is also why it takes longer and it definitely depends what type you're making and kimchi is sometimes fermented for months before its eaten

listen, kimchi is delicious. And it's pleasantly crunchy. <3 it's perfect as a little side dish with anything honestly. Good for digestion too. That's probably why it's also such a staple to Korean food, because it's good with a meal, for taste and for health.
