So basically the stopwatch thing is kinda like a metaphor. This is the interpretation I got when interacting and seeing fans discuss this episode. Ianto and Jack referred to the stopwatch as a reference to them measuring stamina and seeing how long they can last while they bang each other. I guess it can be interpreted differently but regardless, it's definitely a sexual reference. There are some very interesting themes in this episode. Suzie planning it from the start doesn't make sense to me but ignoring that, I really like the themes in this. The conversation Suzie had with Gwen in the car about Jack is interesting. Also the discussion they had on life after death is quite eery and scary. That scene really stands out in very unsettling way.
