Like a few said, there will be more, just not following Vi and Jinx's story. They are many other regions to explore (Bridgewater, Ionia, Demacia, Noxus, etc)

Arcane will probably be the end of Vi and Jinx stories but Runeterra is big enough to have it's own cinematic universe. I'm viewing Arcane as Riot's Iron Man. Because of how successful Iron Man was, Marvel was able to start building the MCU.
