It is also normal for parents to talk to each other through telepathy. Imagine that this is an ordinary family of people, but the child is deaf and dumb, will the parents talk to each other in sign language all the time?

But to answer your questions, Roxy was scared when horse man said Sparde (Deadend). Much like the way Eris reacted to meeting Rugured (Deadend) for the first time. They (Roxy & Eris) have an immense fear of them from childhood. So just by hearing the name Roxy got scared twice. Her parents we also scared, but after Roxy ran away they started interacting with Rugured (Deadend), obviously it took a long time for them to build a "friendship" with him. When we meet Roxy's Village for the first time we are told that everyone communicates telepathically. Also we see a pregnant woman as we explore the village. When Roxy returns home the pregnant lady now is holding her baby to show the passage of time. Also, it sets up the isolation Roxy felt. The episode tries to give you that scary feeling so you understand Roxy more. Since her people communicate telepathically, there is no need to learn how to speak vocally. I am pretty sure in the dub version they emphasize that Roxy's parents learned how to speak out loud to teach/communicate with their daughter. When Roxy's mother says horse she like struggling to say it the first time in English and then says it better the second time. Finally, when Roxy wakes up the sparks slightly indicate that maybe Roxy might begin to understand words in telepathy. Like originally she only hears the sound of two stones hitting each other but then it becomes a bit smoother and crisp with the sound of a fire crackling instead of the rock sound we hear the entire episode.

Her parents were so good at talking because they made a point to practice and keep up with their ability just in case Roxy came home. As to the shots I think it's more to emphasize the surreal feeling Roxy would have being back there after all that time.
