Yet another trashy bachelor recipe.

Jamacian ginger cake. Cut into two layers like you would a sponge cake. Liberally spread lemon curd into the middle, and then place the top layer back on. Optionally spread some lemon curd on to the top as well (but not too much). Bake in the oven until the lemon curd is nice and bubbly, or possibly until the top starts to get a little crusty. Serve with hot custard and/or ice-cream. It's known in my family as "grannys-pudding", for what I hope are obvious reasons.

Layer of butterscotch Angel Delight or Instant Whip, then a layer of crushed up ginger nut biscuits, then a layer of sliced bananas, then another layer of butterscotch Angel Delight or Instant Whip. Optionally repeat layers as many times as you like, or leave as it is.

Just checked the frig and no milk. No cookies in the cabinet. I used saltines and water and it worked just fine!

Instead of waiting for it to cool, it looks like the cup would drop nicely into the light heat sink. It would cool faster and form a very stylish serving arrangement. Maybe a photo would confirm this?.
