iirc, Lucas's original idea with the "a long time ago in a galaxy far far away" was meant to be r2d2 telling the galactic history to the Keeper of the Whills at the end of the universe or something. So y'all are on the right track with it being kind of like a "once upon a time" but also, the line was almost surely an homage to that.
